Asparagus Cream Soup & Crimini Mushrooms


6 Cups vegetable or mushroom stock
1 lb. Asparagus, trimmed and chopped
1/2 lb. Spinach, washed and stemmed
1 Cup whipping cream
Salt & pepper
2 Tbsp. butter
1/2 Cup shallots, sliced
1 Tbsp. garlic, minced
1/2 lb. All Seasons Crimini Mushrooms


In medium stock pot, combine stokc and chopped asparagus. Bring to boil and cook asparagus for 7-8 min. or until soft. Add chopped spinach and cook for an additional 2 min. Transfer soup to a blender or food processor and puree.

Strain soup through a coarse strainer or food mill. Add cream, season with salt and pepper and let sit.

In a non-stick skillet, heat butter over medium-high heat for 45 secs. Add butter and shallots, saute for 2-3 min. or until shallots begin to brown. Add garlic and All Seasons Crimini Mushrooms and sautee until mushrooms are soft and begin to brown. Season well with salt and pepper.

Serves 4-6
